Sun ripened and hand harvested, these peppers are mild, earthy, and have hints of raisin. The Ancho Chili, which is a dried Poblano pepper, is considered part of the "holy trinity" of chilies used in Mexican cooking. 

Uses: Mole, sauces, salsas, pots of beans, chile powders
