Black and glossy lentils, often called "beluga" or "caviar" lentils due to their shape and color, are a dream to eat. Dense, earthy, and quick to cook, these lentils hold their shape well for soups, stews, and salads. 

Lentils have been grown and eaten since as far back as 8000 BC, where evidence of domesticated lentils have been found in present day Northern Syria. 

In true superfood form, lentils have the second highest protein content after soy, are high in vitamin b, magnesium, iron, zinc, soluble fiber, and an excellent source of folate.
